Broccoli Parmesan Fritters

Broccoli is not only packed with nutrients it is also very good. In this recipe, the king of vegetables is combined with garlic, ginger, sambal oelek and bound together with a batter of eggs, chickpea flour, and parmesan cheese.


  • 500 g Broccoli
  • 3 Garlic cloves, finely chopped
  • 1 Tbsp Sambal oelek
  • 2 Tbsp Ginger finely chopped
  • 5 Eggs
  • 150 mL Chickpea flour
  • 100 g Parmesan, grated
  • 1 Tsp Sea salt
  • 200 mL Canola oil


  1. Add the broccoli to boiling water and let it boil for 1 min
  2. Drain and rinse with cold water to stop the cooking process
  3. Chop the broccoli finely
  4. In a mixing bowl, lightly beat the eggs
  5. Add the chickpea flour and whisk until a smooth batter is formed
  6. Add parmesan, broccoli, garlic, sambal oelek, ginger and salt
  7. Mix carefully with a wooden spoon
  8. Heat the canola oil in a large skillet
  9. Once the oil is hot, 170-180 °C, spoon about 2 tablespoons of the mixture into the oil and flatten the mixture slightly with the spoon
  10. Repeat with additional batter leaving at least a few cm between each fritter
  11. Cook for 2-3 minutes until golden brown underneath
  12. Flip the fritters and cook for another 1-2 minutes until golden brown on the other side
  13. Transfer the fritters to a paper towel to drain the oil and then to a serving plate
