Gajar ka Halwa (Carrot Halwa) is a traditional dessert from India. It is made with carrots and milk. I added sultan raisins and coarsly chopped pistachios to add some extra flavours. You just have to try it. Carrots as dessert may not sound so great but prepared in this way you just can’t go wrong.


  • 750 g Carrots, shredded
  • 1L Milk, 3% fat
  • 150 ml Sugar or sugar substitute
  • 1 Tsp Cardamom
  • 75 g Butter
  • 0.5 g Saffron
  • 50 g Pistachio nuts, coarsely chopped
  • 50 ml Sultan raisins



  1. Add the carrots and milk to a large sauce pan
  2. Bring to a boil, reduce the heat and simmer until almost all liquid has been evaporated
  3. Add sugar, butter, and saffron
  4. Cook until dry
  5. Add cardamom, pistacchios, and raisins and mix thoroughly
  6. Serve hot or cold as it is or with vanilla ice cream
