Cauliflower And Cannellini Bean mash

This is a great low carb alternative to mashed potatoes. Here it was served as a side dish to ground beef patties filled with feta cheese and sun-dried tomatoes.

Ingredients

  • 500 g Cauliflower
  • 400 g Cannellini beans, canned
  • 2 Garlic cloves, finely chopped
  • 200 ml Cream
  • 75 g Parmesan cheese, grated
  • Salt
  • White pepper

Directions

  1. In a large sauce pan bring 2 L of water and 1 teaspoon of salt to a boil
  2. Rinse the cauliflower and cut into smaller pieces
  3. Add the cauliflower to the boiling water and boil for 8-10 min until soft
  4. Drain the cauliflower and rinse with cold water in order to stop the cooking process
  5. Rinse the canned canellini beans with cold water
  6. Add the beans to a food processor together with the chopped garlic and and half of the cream
  7. Mix until a smooth paste has been formed
  8. Transfer the bean paste to a sauce pan
  9. Add the boiled cauliflower to the food processor together with the rest of the cream and mix until smooth (2-3 min)
  10. Transfer the cauliflower mixture to the sauce pan containing the bean paste together with the Parmesan cheese
  11. Mix and heat on low heat until a homogeneous mixture has been formed
  12. Add salt and white pepper to taste
