Chickpea and Cucumber Salad

This is a great side dish that goes very well with fish.

Ingredients

  • 400g Chickpeas, canned, drained
  • 100 mL Parsley, finely chopped
  • 1 Tbsp Mint leaves, dried
  • 1/2 Red onion, thinly sliced
  • 100g Cucumber, halved and thinly sliced
  • 2 Tbsp Orange juice
  • 1 ½ Tbsp Olive oil
  • 1/2 Tsp Cumin, ground
  • 1 Tsp Sambal oelek

Directions

  1. Combine all ingredients in a mixing bowl
  2. Season with salt and pepper
  3. Transfer to a serving bowl
