Sugar snaps are great as a side dish to meat, chicken, and sometimes fish. A combination of fresh ginger, red chili, garlic, peanuts, and coconut milk makes this irresistible. This recipe is based on Indonesian-style green beans that I found on Kayotic Kitchen,

  • 300g Sugar snaps
  • 1 Onion, finely chopped
  • 3 Garlic cloves, finely chopped
  • 2 Tbsp Ginger, finely chopped
  • 1 Tbsp Sambal Oelek
  • 200 mL Coconut milk
  • 1 Tsp Turmeric
  • 100g Peanuts, processed in a food processor to small pieces
  • 2 Tbsp Olive oil
  • 1 Tbsp dried coconut
  • Salt

  1. Heat the olive oil on medium heat in a skillet
  2. Add the onions and sauté for a few minutes
  3. Add garlic, ginger, and sambal oelek and continue to sauté for a few minutes
  4. Add the turmeric and stir for a few seconds
  5. Add the coconut milk and stir
  6. Add the sugar snaps and simmer for 5-10 min. Don’t overcook because you want the sugar snaps to be crunchy
  7. Add the peanuts and stir
  8. Add salt and pepper to taste
  9. Transfer to a serving bowl and sprinkle some coconut on top
