Jerk Chicken

Jerk chicken originates from Jamaica. A lot of flavours are combined in a very easy to make marinade. After marinating for 24 hours the chicken is grilled over low heat to perfection. You can also cook it in the oven (175 °C, 30 min or until inside temperature is 70 °C). The lime juice can be replaced with orange juice if you prefer a slightly sweeter version.

Ingredients

  • 1 Kg Chicken breast, cut in pieces
  • 2 Scallions, chopped
  • 2 Large carlic cloves, chopped
  • 1 Small onion, chopped
  • 2 Tbsp Sambal oelek
  • 60 mL Lime juice
  • 1 Tbsp Soy sauce
  • 2 Tbsp Olive oil
  • 2 Tsp salt
  • 1 Tbsp Muscovado sugar (or regular brown sugar)
  • 1 Tbsp Thyme leaves, chopped
  • 1 Tsp Allspice, ground
  • 1 Tsp Black pepper
  • 1/2 Tsp Cinnamon, ground

Directions

  1. Add all ingredients except the chicken to a food processor and blend until smooth
  2. Add the chicken to a large plastic bag
  3. Pour the marinade over the chicken
  4. Remove the air from the plastic bag and seal
  5. Refrigerate for 24 hours
  6. Remove the chicken from the refrigerator and allow it to reach room temperature prior to grilling (about 1 hour)
  7. Set the heat on medium and put the chicken on the grill. Turn every 5 min and continue to cook until inside temperature has reached 70 °C
