Parmesan Roasted Vegetables

This is our family’s favorite vegetable recipe. It is great as a side dish with meat or chicken. You can add other vegetables like cauliflower, sweet potatoes, parsnips. Just use your imagination


  • 2 Onions
  • 250g Broccoli
  • 1 Red or yellow bell pepper
  • 250g Zucchini
  • 2 Garlic cloves, finely chopped
  • 1 Red chili, finely chopped
  • 2 Tbsp ginger, finely chopped
  • 75g Parmesan cheese, finely grated
  • 1 Tsp salt
  • 1 Tbsp Grill seasoning
  • 1 Tbsp Thyme, dried
  • 3 Tbsp olive oil



  1. Pre-heat the oven at 200 °C
  2. Cut the onion, broccoli, bell pepper, and zucchini in 3×3 cm pieces and transfer to an oven roasting pan
  3. Add the garlic, chili, and ginger
  4. Season with salt, grill seasoning, and thyme
  5. Add the olive oil and mix thoroughly
  6. Put the pan in the oven and roast for 20 min
  7. Remove the pan from the oven and turn the vegetables and place them in the middle of the pan
  8. Add the Parmesan cheese on top of the vegetables and continue to roast the vegetables in the oven for 10-15 min until nicely browned
