Peanut Sauce

Peanut sauce is an absolute must together with chicken satay. Homemade like this is so much better than what you can get in the supermarket. I found this recipe on Kayotic Kitchen, http://www.kayotic.nl/blog/.

Ingredients

  • 250g Peanuts
  • 1 Tbsp Peanut oil
  • 1 Onion, finely chopped
  • 2 Garlic cloves, finely chopped
  • 2 Tbsp Ginger, finely chopped
  • 1 Tbsp Sambal Oelek
  • 1 Tbsp Peanut oil
  • 2 Tbsp Ketjap Manis
  • 1 Chicken buillon cube
  • 200 mL water
  • 100 mL Coconut milk

Directions

  1. Add peanuts and peanut oil to a food processor and run the processor until a creamy peanut butter paste has been formed (it can take up to 5 min)
  2. Heat the peanut oil in a medium size sauce pan on medium heat
  3. Sautee the onion, garlic, and Sambal Oelek for a few minutes until the onion gets translucent
  4. Add the peanut butter paste together with water, coconut milk, Ketjap Manis, and soy sauce
  5. Bring to a boil and simmer for 10-15 min
