A chuck roast is cooked in the oven at low temperature for up to 6 hours together with onions, garlic, tomatoes and spices. I served this as a beef stew together with pan-fried cabbage.


  • 1Kg Boneless beef chuck roast
  • 4 Onions, sliced
  • 4 Garlic cloves, coarsely chopped
  • 1 Tbsp Sambal oelek
  • 2 Tbsp Tomato paste
  • 140g Bacon, cut in 2×2 cm pieces
  • 400g Crushed tomatoes
  • 1 Tbsp Thyme, dried
  • 1 Tsp Paprika powder
  • 2 Tbsp Olive oil



  1. Preheat the oven at 125 °C
  2. Heat the olive oil in a large sauce pan that can be used in the oven, on medium high
  3. Add the bacon and cook for a few minutes
  4. Add the onion and garlic and cook for a few minutes
  5. Add the Sambal oelek and tomato paste and cook for a few minutes while stirring
  6. Add the crushed tomatoes and thyme and stir
  7. Add the meat in one piece and make sure it will be covered by onion/tomato mixture
  8. Put the lid on and cook in the oven for 5-6 hours
