This traditional frech vegetable dish has been spiced up with som chili paste (sambal oelek) and fresh ginger. It goes extremely well together with grilled beef, lamb or pork.

  • source 2 Onions, sliced

  • 2 Red bell peppers, diced

  • 1 Eggplant, diced
  • 400 g Tomatoes, canned, crushed
  • 2 Tbsp Tomato paste
  • 3 Garlic cloves, finely chopped
  • 3 Tbsp, Ginger, finely chopped
  • 2 Tbsp, Sambal oelek
  • 4 Tbsp Olive oil
  • Salt


  1. Heat a large sauce pan on medium heat
  2. Add 2 tbsp of the olive oil
  3. Add the onion and cook for a few minutes until translucent
  4. Heat a second saucepan or skillet on medium heat
  5. Add the rest of the olive oil and the eggplant
  6. Cook for 4-5 minutes until soft
  7. Add the zucchini and red bell pepper and cook for another 2-3 minutes until the vegetables become ”al dente”
  8. Remove from the heat and set aside
  9. Add garlic, ginger, and sambal oelek to the onions and cook for a few minutes
  10. Add the tomato paste and continue to cook for 2-3 minutes
  11. Add the crushed tomatoes and bring to a simmer
  12. Add the eggplant/bell pepper/zucchini mixture and continue to simmer for a few minutes
  13. Add salt and pepper to taste
